It’s finally great grilling weather and my friend Peter’s Coffee Spice Rub goes on all our steaks. I like to double the recipe and store it in a jar so whenever the steak mood hits—we’re ready!
In a small bowl combine 2 Tbsp. ancho chile powder, 2 Tbsp. finely ground coffee, 2 Tbsp. dark brown sugar, 1 Tbsp. smoked Spanish paprika, 1 ½ tsp. dried oregano, 1 ½ tsp. ground black pepper, 1 ½ tsp. ground coriander, 1 ½ tsp. mustard powder, 1 tsp. ground ginger, a pinch of red pepper flakes and 1 Tbsp kosher salt. Mix well and rub over your favorite steak. Store the extra in a jar or Ziploc. Enjoy!
